Red Garnet Amaranth Planting Instructions:
In colder regions, start seeds indoors in the early spring and transplant after the last frost. Red Garnet Amaranth does best in full sun. Plant 1/4 to 1/2 inch deep, spacing 14" between plants. Germination takes 2 to 3 weeks at soil temperatures between 70-75 F. Bottom water or mist to prevent the sowing mix from splashing on the seedlings and maintain even moisture. Do not allow the soil to dry out. Grow time is about 110 to 150 days.
Red Garnet Amaranth Harvesting Instructions:
After 100 to 150 days, the plants will have magenta flower heads. Whereas the young leaves are mild and make a good addition to a salad, the mature leaves are great cooked and taste similar to spinach. Once the leaves are mature and have been harvested, the seeds can be used like a grain. They contain many amino acids and other nutrients. The seeds may also be eaten raw, sprouted, toasted, or ground into a healthy flour.
